Spicy Paneer curry


Ingredients:

# Paneer - 200 gms
# Onions (finely chopped) - 1 cup
# Tomatoes (finely chopped) - 1/2 cup
# Any vegetable of your choice or mixture of vegetables - 1 cup
# Garam masala powder - 2 tsp
# Chilli powder - 2 tsp
# Cumin powder - 1/2 tsp
# Coriander powder - 2 tsp
# Green chillis - 2 nos
# Spring onions - to garnish
# Salt - as required
# Ginger garlic paste - 2 tbsp
# Oil - as required


Preparation:

# Clean and dice the paneer into smaller cubes. Save the whey water. 

# Heat oil in a pan and add the onion and saute till golden brown.

# Add the ginger garlic paste and saute till the raw smell fades away. 

# Now add the garam masala powder, chilli powder and coriander powder and saute till the raw smell fades away.

# Now add the vegetables and tomatoes and cook till the tomatoes turn tender. 

# Add the whey water and heat on medium flame until the vegetables are half-cooked.

# When the vegetables are half-cooked, add the diced paneer and cook on low flame until the vegetables are cooked and the gravy thickens. 

# Garnish with chopped spring onions and serve warm along with parathas or pooris.
