Kashmiri Mutton Curry


Ingredients:

# Mutton  - 1/2 kg
# Onions - 2 nos
# Pepper - 1 tsp
# Green Chillis - 4
# Garlic paste - 1 tbsp
# Mint leaves - as required
# Garam masala powder - 2 tbsp
# Chilli powder - 2 tbsp
# Coriander powder - 1 tbsp
# Saffron - a pinch
# Turmeric powder - 1 tsp
# Cashews - a few
# Ghee - as required
# Salt - as required

Preparation:

# Clean and cut mutton into smaller pieces.

# In a heavy bottomed pan, heat ghee and add the garlic paste, ground pepper and salt and saute until the raw smell of garlic fades away.

# Add the mutton pieces and saute for a minute or two. 

# Add water and cook till the mutton pieces are half cooked and then remove from heat. 

# Grind the onions along with mint leaves, garam masala powder, chilli powder, coriander powder  and turmeric powder.

# Grind the cashews into a fine paste and keep it aside.

# In a separate pan, heat ghee and fry the masala paste until the raw smell fades away. 

# Add the saffron and the cashew paste and saute for a minute or two.

# Add the half cooked mutton along with the water in which it was cooked, and cook it on medium flame until it is completely cooked. 

# Garnish with mint leaves and serve warm.
