Carrot Basundhi

Hey people... 
I am back with another mouthwatering dish, Carrot Basundhi. 
It is not only easy to make, but also a delicious treat which can act as a great dessert. 
So, here's how you make this excellent sweet...



Ingredients:

# Carrot - 2 nos
# Milk - 2 liters
# Ghee - 6 tbsp
# Sugar - 15 tbsp
# Condensed milk - 1 tbsp
# Cashews - a few
# Almonds - a few
# Raisins - a few
# Elachi - a few

Preparation:

# Shred the carrots and fry them in a heavy bottomed pan. 

# Take care not to over fry them, fry only till the raw smell fades away, and remove it from fire. 

# After the carrot cools down, add the milk to it and bring the mixture to boil, stirring occasionally. 

# When the mixture thickens, add sugar and the condensed milk, and simmer it, stirring occasionally. 

# After stirring for about 5 minutes, remove it from fire. 

# Once it cools down, refrigerate it for about 3 to 4 hours. 

# Garnish with almonds, cashews, raisins and elachi and serve chilled.
